The salsa
Instructions
- Mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl.
- Brush the salmon fillets with olive oil and squeeze lime juice over them, then coat with the seasoning mix.
- Heat a skillet over medium-high heat and add olive oil or butter.
- Place the salmon fillets skin-side down in the hot skillet and cook for 4-5 minutes until the skin is crispy.
- Flip the salmon and cook for an additional 2-3 minutes until cooked through.
- Serve the salmon over rice or quinoa and top with peach mango salsa.
