Ingredients

The salmon

  • 4 6 oz salmon fillets
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice

The seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ¼ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The salsa

  • 2 cups peach mango salsa

Instructions

  1. Mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Brush the salmon fillets with olive oil and squeeze lime juice over them, then coat with the seasoning mix.
  3. Heat a skillet over medium-high heat and add olive oil or butter.
  4. Place the salmon fillets skin-side down in the hot skillet and cook for 4-5 minutes until the skin is crispy.
  5. Flip the salmon and cook for an additional 2-3 minutes until cooked through.
  6. Serve the salmon over rice or quinoa and top with peach mango salsa.
