Ingredients

The salmon

  • 1 lb salmon

The marinade

  • 1 tbs olive oil
  • ¼ cup lime juice
  • 1 tsp lime zest
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 tbs coconut sugar
  • 1 tsp salt
  • 1 tsp chipotle in adobo

Instructions

  1. Place the salmon in a baking dish.
  2. In a small bowl, stir together the remaining ingredients and pour this mixture over the salmon.
  3. Cover the baking dish and refrigerate the salmon for 30 minutes to marinate.
  4. Preheat the oven to 325 degrees.
  5. Bake the salmon for about 20 to 25 minutes, checking for doneness.
  6. If desired, broil the salmon for the last minute to brown the topping.
  7. Serve warm.
