Instructions
- Let the salmon sit at room temperature for 10 minutes and preheat the oven to 375°F.
- Line a baking dish with aluminum foil and lightly coat it with nonstick spray.
- Pat the salmon dry and place it in the center of the foil.
- In a small bowl, mix together the brown sugar, chipotle powder, lime zest, and salt.
- Brush the salmon with olive oil and lime juice, then sprinkle the spice mixture evenly on top.
- Fold the foil over the salmon to create a sealed packet, leaving some room for air circulation.
- Bake the salmon for 12 to 18 minutes until almost cooked through.
- Open the foil and broil the salmon for an additional 3 minutes until the top is golden.
- Check the internal temperature; it should be around 145°F when done.
- Cut into portions, sprinkle with cilantro, and serve.
