Spicy Salmon

Ingredients

The salmon

  • 1 ¾ pounds side of salmon

The spice rub

  • 1 tablespoon brown sugar
  • 1 ½ teaspoons chipotle chile powder
  • 1 medium lime (zest and juice)
  • 1 ½ teaspoons kosher salt
  • 1 tablespoon extra-virgin olive oil or melted unsalted butter
  • 3 tablespoons chopped fresh cilantro

Instructions

  1. Let the salmon sit at room temperature for 10 minutes and preheat the oven to 375°F.
  2. Line a baking dish with aluminum foil and lightly coat it with nonstick spray.
  3. Pat the salmon dry and place it in the center of the foil.
  4. In a small bowl, mix together the brown sugar, chipotle powder, lime zest, and salt.
  5. Brush the salmon with olive oil and lime juice, then sprinkle the spice mixture evenly on top.
  6. Fold the foil over the salmon to create a sealed packet, leaving some room for air circulation.
  7. Bake the salmon for 12 to 18 minutes until almost cooked through.
  8. Open the foil and broil the salmon for an additional 3 minutes until the top is golden.
  9. Check the internal temperature; it should be around 145°F when done.
  10. Cut into portions, sprinkle with cilantro, and serve.
