Chili Lime Salmon

  • 4 oz. salmon filet, skin on
  • 1 teaspoon fresh lime zest
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ancho chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 1 tablespoon lime juice
  • 1 tablespoon avocado oil

Mango Avocado Salsa

  • ¾ cup diced mango
  • 2 whole avocados, diced
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • tablespoons diced jalapeño
  • 1 tablespoon red wine vinegar
  • 1 whole lime juice
  • to taste salt

Instructions

  1. Preheat the grill to medium-high heat (about 375-400°F).
  2. In a medium bowl, combine diced mango, avocado, red onion, cilantro, jalapeño, red wine vinegar, lime juice, and salt. Mix gently and set aside.
  3. In a small bowl, mix fresh lime zest, smoked paprika, ancho chili powder, garlic powder, salt, lime juice, and avocado oil to create the spice rub.
  4. Rub the spice blend on the flesh side of the salmon.
  5. Ensure the grill grates are clean and oil them to prevent sticking.
  6. Place the salmon skin side down on the grill and cook for 4-5 minutes without moving it.
  7. Gently flip the salmon using a spatula and grill the flesh side for another 4 minutes.
  8. Remove the salmon from the grill and let it rest before serving with the mango avocado salsa.
