Instructions
- Preheat the grill to medium-high heat (about 375-400°F).
- In a medium bowl, combine diced mango, avocado, red onion, cilantro, jalapeño, red wine vinegar, lime juice, and salt. Mix gently and set aside.
- In a small bowl, mix fresh lime zest, smoked paprika, ancho chili powder, garlic powder, salt, lime juice, and avocado oil to create the spice rub.
- Rub the spice blend on the flesh side of the salmon.
- Ensure the grill grates are clean and oil them to prevent sticking.
- Place the salmon skin side down on the grill and cook for 4-5 minutes without moving it.
- Gently flip the salmon using a spatula and grill the flesh side for another 4 minutes.
- Remove the salmon from the grill and let it rest before serving with the mango avocado salsa.
