Ingredients

Creamy Cilantro Lime Dressing

  • cup olive oil
  • ¼ cup lime juice
  • ½ cup mayo
  • ½ teaspoon salt
  • 2 cloves garlic
  • ½ piece jalapeno, sliced
  • ½ teaspoon honey
  • ½ cup cilantro, packed

Grilled Salmon Salad

  • 4 pieces salmon (4-6 ounces each)
  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • 5 ounces baby arugula
  • 3 pieces Turkish cucumbers, sliced
  • ¼ cup red onion, thinly sliced
  • 1 cup cherry or grape tomatoes, sliced in half
  • 2 pieces avocados, sliced
  • cup toasted pumpkin seeds
  • cup cotija cheese, crumbled
  • to taste cilantro leaves for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Make the dressing by blending all ingredients except cilantro until smooth, then add cilantro and blend again.
  3. Brush salmon with olive oil and season with salt, chili powder, and cumin before placing on the grill.
  4. Grill salmon for 2-3 minutes on each side until cooked to your liking.
  5. In a large bowl, toss arugula, cucumbers, and onions with some dressing, then fold in avocado, tomatoes, half the pumpkin seeds, and half the cotija cheese.
  6. Transfer the salad to a serving platter, top with grilled salmon, and sprinkle with remaining pumpkin seeds, cotija cheese, and cilantro leaves.
