Instructions
- Preheat the grill to medium-high heat.
- Make the dressing by blending all ingredients except cilantro until smooth, then add cilantro and blend again.
- Brush salmon with olive oil and season with salt, chili powder, and cumin before placing on the grill.
- Grill salmon for 2-3 minutes on each side until cooked to your liking.
- In a large bowl, toss arugula, cucumbers, and onions with some dressing, then fold in avocado, tomatoes, half the pumpkin seeds, and half the cotija cheese.
- Transfer the salad to a serving platter, top with grilled salmon, and sprinkle with remaining pumpkin seeds, cotija cheese, and cilantro leaves.
