Instructions
- Preheat the grill to medium-high.
- Cook quinoa or rice according to package directions.
- Brush salmon and eggplant or zucchini with olive oil and season with salt and pepper.
- Prepare the Tzatziki sauce or use store-bought.
- Grill the salmon, lemon, tomato, and eggplant on a greased grill, cooking the salmon for 3-4 minutes on each side.
- Assemble the bowls by dividing quinoa among two bowls, adding greens, fresh veggies, and grilled items.
- Drizzle with olive oil, sprinkle with salt and pepper, and top with Tzatziki sauce.
