Instructions
- Whisk together all ingredients for the Mediterranean vinaigrette and set aside.
- Season each salmon filet with Greek seasoning and let it come to room temperature.
- Heat olive oil in a pan over medium heat and cook the salmon skin-side down for 3-4 minutes until it releases easily from the pan.
- Flip the salmon and cook for an additional 2-3 minutes to your preferred doneness, then transfer to a cutting board to rest.
- In a bowl, combine red onion, red bell pepper, cucumber, cherry tomatoes, and feta, then toss with half of the vinaigrette.
- Divide the cooked rice between two bowls, top each with a salmon filet, half of the vegetable medley, and the remaining vinaigrette. Serve immediately.
