Mediterranean Salmon Bowls

Ingredients

The Salmon Bowls

  • 2 cups cooked Wild Rice
  • 2 oz. Salmon Filets (each)
  • ½ tsp. Greek Seasoning
  • 1 tbsp. Olive Oil
  • ¼ cup finely chopped Red Onion
  • ¼ cup finely chopped Red Bell Pepper
  • ¼ cup finely chopped Cucumber
  • ¼ cup quartered Cherry Tomatoes
  • ¼ cup crumbled Feta Cheese

The Mediterranean Vinaigrette

  • 3 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Apple Cider Vinegar
  • ½ tsp. Honey
  • 1 tsp. fresh Oregano
  • ½ tsp. fresh Basil
  • ¼ tsp. Garlic Powder
  • Salt & Pepper to taste
  • 1 tsp. Dijon Mustard
  • 1 tsp. fresh Lemon Juice

Instructions

  1. Whisk together all ingredients for the Mediterranean vinaigrette and set aside.
  2. Season each salmon filet with Greek seasoning and let it come to room temperature.
  3. Heat olive oil in a pan over medium heat and cook the salmon skin-side down for 3-4 minutes until it releases easily from the pan.
  4. Flip the salmon and cook for an additional 2-3 minutes to your preferred doneness, then transfer to a cutting board to rest.
  5. In a bowl, combine red onion, red bell pepper, cucumber, cherry tomatoes, and feta, then toss with half of the vinaigrette.
  6. Divide the cooked rice between two bowls, top each with a salmon filet, half of the vegetable medley, and the remaining vinaigrette. Serve immediately.
