Ingredients

The bowl

  • 1–1 ½ lbs. salmon fillets
  • 1 ⅓ cups cooked brown rice or quinoa
  • 7–8 cups roughly chopped romaine
  • ¾ cup sliced radishes
  • 1 avocado
  • ⅓–½ cup parmesan cheese
  • ½ cup crunchy chickpeas
  • 1 lemon

The dressing

  • ½ cup Primal Kitchen Caesar Dressing
  • ¼–1/3 cup additional Caesar dressing for tossing greens

Instructions

  1. Preheat the oven to 425°F.
  2. Marinate the salmon fillets in Caesar dressing for 15 minutes.
  3. Combine romaine, sliced radishes, and parmesan in a bowl, tossing with some Caesar dressing.
  4. Place the marinated salmon on a baking sheet and bake for 9-12 minutes until cooked through.
  5. Assemble the bowls by dividing the salad, adding rice, salmon, avocado, radishes, parmesan, and chickpeas.
  6. Drizzle with more Caesar dressing and serve with lemon wedges.
