Easy Paleo Salmon Salad Bowls

Ingredients

The salad

  • 4 fillets salmon
  • ½ cups romaine lettuce, chopped
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • to taste salt and pepper
  • to taste veggies (e.g., cucumber, carrots, tomatoes, kraut)

The dressing

  • 1 each avocado, pitted and peeled
  • 3 cloves garlic, peeled
  • 1 each lemon, juice of
  • 1 tbsp dijon mustard
  • 1 tsp ground black pepper
  • 1 tsp apple cider vinegar
  • ½ tsp sea salt
  • ¼ cup olive oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet and season with smoked paprika, garlic powder, salt, and pepper.
  3. Bake the salmon for 15-20 minutes until flaky.
  4. While the salmon is cooking, chop the romaine lettuce and set it aside.
  5. In a food processor, combine avocado, garlic, lemon juice, dijon mustard, black pepper, and apple cider vinegar, and blend until combined.
  6. Stream in olive oil while blending until smooth and creamy, then season with sea salt as desired.
  7. Toss half of the dressing with the romaine lettuce and set aside.
  8. Once the salmon is done, assemble the bowls with romaine and top with salmon, adding extra dressing if desired.
