Mediterranean Bowl with Salmon

Ingredients

Marinade

  • ½ cup extra virgin olive oil
  • 1 lemon juiced (~3-4 Tbsp.)
  • 2 Tbsp. fresh oregano leaves
  • 1 Tbsp. fresh dill
  • 2 cloves garlic
  • 1 tsp. honey or maple syrup
  • ½ tsp. sea salt
  • ¼ tsp. black pepper

Bowl

  • 4 fillets wild-caught salmon
  • cups cooked quinoa
  • 4 cups romaine or mixed greens
  • 1 cup sliced English cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup sliced red onion
  • 1 can garbanzo beans
  • cup pitted kalamata olives
  • ½ cup feta cheese
  • 1 whole avocado

Tzatziki

  • ½ cup grated English cucumber
  • ½ cup plain Greek yogurt
  • Tbsp. lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. fresh dill
  • 2 cloves garlic
  • ¼ tsp. sea salt
  • ¼ tsp. black pepper

Instructions

  1. Preheat the oven to 425℉.
  2. Combine the marinade ingredients in a small bowl. Marinate the salmon for 15 minutes with half of the marinade.
  3. Bake the salmon on a parchment-lined baking sheet for 9-12 minutes until cooked through.
  4. Mix the cucumber, cherry tomatoes, red onion, and garbanzo beans with the remaining marinade.
  5. Prepare the Tzatziki by mixing all the Tzatziki ingredients in a bowl.
  6. Assemble the bowls with greens, the vegetable mixture, quinoa, salmon, Tzatziki, feta, olives, and avocado.
