Instructions
- Preheat the oven to 425℉.
- Combine the marinade ingredients in a small bowl. Marinate the salmon for 15 minutes with half of the marinade.
- Bake the salmon on a parchment-lined baking sheet for 9-12 minutes until cooked through.
- Mix the cucumber, cherry tomatoes, red onion, and garbanzo beans with the remaining marinade.
- Prepare the Tzatziki by mixing all the Tzatziki ingredients in a bowl.
- Assemble the bowls with greens, the vegetable mixture, quinoa, salmon, Tzatziki, feta, olives, and avocado.
