Mediterranean Bowl with Edamame and Quinoa

Ingredients

Salad Bowl

  • 2 cups loose fresh greens
  • ½ cup frozen shelled edamame
  • ½ cup cherry tomatoes
  • ½ cup cooked quinoa
  • 10 pieces Kalamata olives
  • 1 small cucumber
  • ¼ cup sliced red onions
  • 2 tablespoons pine nuts

Mediterranean Vinaigrette

  • 1 tablespoon extra virgin olive oil
  • tablespoons red wine vinegar
  • a pinch garlic powder
  • a pinch sea salt
  • a pinch black pepper
  • a pinch smoked red paprika
  • ½ teaspoon dried oregano

Instructions

  1. Fill a large bowl with greens.
  2. Top the greens with edamame, cherry tomatoes, cooked quinoa, Kalamata olives, sliced cucumbers, sliced red onions, and pine nuts.
  3. In a small dish, whisk together the vinaigrette ingredients: olive oil, red wine vinegar, garlic powder, sea salt, black pepper, smoked paprika, and oregano.
  4. Drizzle the vinaigrette over the bowl before serving.
