Mexican Grilled Salmon Salad

Ingredients

The salmon

  • 4 fillets skinless salmon
  • 1 tsp ancho chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp onion powder
  • 1 ½ Tbsp olive oil
  • to taste salt and pepper
  • 1 lime halved

The salad

  • 1 head romaine lettuce
  • 10 oz grape tomatoes
  • 1 cucumber peeled and chopped
  • 1 ½ cups fresh corn
  • ½ red onion sliced and rinsed
  • ¼ cup cilantro leaves (optional)
  • 4 oz queso fresco or feta cheese
  • 1 batch Avocado Greek Yogurt Ranch Dressing

Instructions

  1. Preheat the grill over medium-high heat.
  2. Whisk together the chili powder, cumin, paprika, and onion powder.
  3. Brush the salmon fillets with olive oil and season with salt, pepper, and the spice mixture.
  4. Brush the grill with olive oil and add the salmon, cooking for about 3 minutes on each side or until done.
  5. Remove the salmon from the grill and squeeze lime juice over the top.
  6. Divide the salad ingredients among four plates and top with the grilled salmon.
  7. Drizzle with avocado ranch dressing before serving.
