Grilled Salmon with Avocado Chimichurri

Ingredients

The salmon

  • 4 pieces skinless salmon fillets (6 oz. each)
  • 1 Tbsp olive oil
  • 1 tsp ground cumin
  • Salt to taste salt
  • Salt to taste black pepper

The avocado chimichurri

  • 1 small avocado (diced)
  • ¼ cup finely minced fresh parsley
  • 2 Tbsp finely minced fresh cilantro
  • 1 tsp dried oregano
  • tsp minced garlic
  • Tbsp red wine vinegar
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp minced red onion
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp water
  • tsp red pepper flakes (optional)

Instructions

  1. Preheat a gas grill to 425 degrees.
  2. Whisk together all chimichurri ingredients in a bowl.
  3. Brush both sides of the salmon with olive oil and season with salt, pepper, and cumin.
  4. Brush grill grates with oil, place salmon on the grill, and grill for about 3 minutes per side or until desired doneness.
  5. Serve the salmon immediately topped with avocado chimichurri.
