Chimichurri Baked Salmon

Ingredients

The salmon

  • 4 fillets salmon (6 oz each)
  • 1 Tbsp olive oil
  • ½ lemon juice
  • to taste salt
  • to taste black pepper

The chimichurri sauce

  • ½ cup chimichurri sauce
  • to taste fresh parsley
  • to taste fresh basil
  • to taste shallot
  • to taste garlic
  • to taste red wine vinegar
  • to taste crushed red pepper flakes

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. Place the salmon skin side down on the baking sheet and brush with olive oil.
  3. Squeeze lemon juice over the salmon and season with salt and pepper.
  4. Bake the salmon for 8 to 10 minutes per inch of thickness, then broil for an additional 2 to 3 minutes until crisp.
  5. While the salmon is baking, prepare the chimichurri sauce by blending all sauce ingredients in a food processor.
  6. Let the salmon rest for 5 minutes after baking, then spoon chimichurri sauce over the fillets and serve.
