Ingredients

The tartare

  • ½ small shallot, finely chopped
  • 2 teaspoons finely grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 12 ounces highest-quality salmon fillets, cut into ½-inch cubes
  • 1 tablespoon finely chopped tarragon
  • 2 tablespoons finely chopped chives
  • 2 teaspoons olive oil (for drizzling)

For serving

  • 4 pieces seedy crackers
  • 1 unit Persian cucumber, thinly sliced crosswise
  • to taste unit lemon wedges (for serving)

Instructions

  1. Combine shallot, lemon zest, and lemon juice in a small bowl; season with salt and pepper and let sit for 5 minutes.
  2. In a medium bowl, mix salmon, tarragon, and 1 tablespoon of chives; drizzle with olive oil, season with salt and pepper, and gently mix to coat.
  3. Add the shallot mixture to the salmon and toss to combine.
  4. Spoon the mixture over crackers, top with cucumber and remaining chives, and serve with lemon wedges.
