The main dish

  • pounds chicken thighs (boneless, skinless)
  • 1 tablespoon oregano
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 15 ounce can pinto beans (drained and rinsed)
  • cups frozen corn
  • 1 12 ounce jar tomatillo salsa

For serving

  • to taste brown rice
  • to taste Monterey Jack cheese (grated)
  • to taste avocado (sliced)
  • to taste sour cream
  • to taste cilantro
  • to taste jalapeño (diced)

Instructions

  1. Place the chicken in the slow cooker.
  2. Sprinkle oregano, cumin, salt, and pepper over the chicken.
  3. Add the pinto beans, corn, and salsa to the slow cooker.
  4. Cook on high for 3 to 4 hours or low for 6 hours.
  5. Serve over brown rice and top with cheese, avocado, sour cream, cilantro, and jalapeños.
