Slow Cooker Green Chile Chicken

Ingredients

  • 1 tablespoon avocado oil
  • 1.75 pounds organic, boneless, skinless chicken thighs
  • ¼ teaspoon taco seasoning
  • 2 cans (4 ounces each) diced green chiles
  • 1 sprig fresh rosemary

Instructions

  1. Heat the avocado oil in a skillet over medium heat.
  2. Sauté the chicken thighs for 3 minutes on each side, covered.
  3. Transfer the chicken to a slow cooker.
  4. Add the green chiles and taco seasoning over the chicken, and place the rosemary on top.
  5. Cover and cook on low for 8 hours or high for 4-6 hours.
  6. Serve hot with your choice of rice or side dishes.
