Instructions
- Melt the chocolate chips in the microwave in 30-second increments and allow to cool.
- Dissolve the espresso powder in hot water.
- In a medium bowl, combine flour, baking soda, and salt.
- In a stand mixer, beat together butter, white sugar, and brown sugar until light and fluffy.
- Add the cooled chocolate, coffee mixture, and egg to the butter mixture and beat again.
- Gradually mix in the flour mixture until just combined.
- Chill the dough for at least 30 minutes or up to overnight.
- Preheat the oven to 350°F and roll the dough into 1¼ inch balls.
- Arrange the balls on ungreased cookie sheets and bake for 10-12 minutes until set.
- Let cookies cool on the baking sheet for 3 minutes before transferring to a cooling rack.
- For the frosting, beat together butter, powdered sugar, milk, and peppermint extract until fluffy.
- Frost the cooled cookies and sprinkle with peppermint candies if desired.
