Ingredients

The cookies

  • 12 oz semi-sweet baking chocolate, broken into pieces or chopped
  • ½ cup unsalted butter, diced into 1 Tbsp pieces
  • cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • tsp baking powder
  • ½ tsp salt
  • cups packed light brown sugar
  • 3 large eggs
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 24 large marshmallows

The icing

  • 2 cups powdered sugar
  • ¼ cup cocoa powder
  • 4 Tbsp unsalted butter, diced into small pieces
  • ¼ cup half and half
  • ¼ tsp peppermint extract

Instructions

  1. Melt chocolate and butter in a microwave-safe bowl, stirring until smooth, then let cool slightly.
  2. In another bowl, combine flour, cocoa powder, baking powder, and salt; whisk to combine.
  3. In a stand mixer, blend brown sugar, eggs, peppermint extract, and vanilla; mix in the chocolate mixture.
  4. Gradually add the flour mixture and mix until just combined. Chill the dough for 1 hour.
  5. Preheat the oven to 325°F during the last 15 minutes of chilling.
  6. Scoop dough into balls and place on a lined baking sheet, spacing them 2 inches apart.
  7. Bake for about 9 minutes, then add a marshmallow half to each cookie and bake for an additional 2-3 minutes.
  8. Cool cookies on a wire rack.
  9. For the icing, sift powdered sugar and cocoa into a bowl, then heat butter and cream until simmering.
  10. Whisk in the powdered sugar and cocoa until smooth, then add peppermint extract.
  11. Spoon icing over cookies and sprinkle with crushed peppermint.
