Peppermint Hot Chocolate Cookies

Instructions
- Melt chocolate and butter in a microwave-safe bowl, stirring until smooth, then let cool slightly.
- In another bowl, combine flour, cocoa powder, baking powder, and salt; whisk to combine.
- In a stand mixer, blend brown sugar, eggs, peppermint extract, and vanilla; mix in the chocolate mixture.
- Gradually add the flour mixture and mix until just combined. Chill the dough for 1 hour.
- Preheat the oven to 325°F during the last 15 minutes of chilling.
- Scoop dough into balls and place on a lined baking sheet, spacing them 2 inches apart.
- Bake for about 9 minutes, then add a marshmallow half to each cookie and bake for an additional 2-3 minutes.
- Cool cookies on a wire rack.
- For the icing, sift powdered sugar and cocoa into a bowl, then heat butter and cream until simmering.
- Whisk in the powdered sugar and cocoa until smooth, then add peppermint extract.
- Spoon icing over cookies and sprinkle with crushed peppermint.
