Miniature Hot Chocolate Cookies

Instructions
- Melt butter and 2/3 cup of chocolate chips in the microwave and let cool slightly.
- Mix brown sugar, egg, and vanilla in a bowl until combined, then add the cooled chocolate mixture.
- Stir in flour, cocoa powder, baking powder, and salt until just combined.
- Chill the dough for 45 minutes until firm.
- Preheat the oven to 325°F and prepare baking sheets.
- Scoop and roll dough into 1-inch balls and place on baking trays.
- Bake for 7 minutes, then add chocolate chips and mini marshmallows on top.
- Press marshmallows into the cookies and return to the oven for another 4 minutes.
- Sprinkle with chopped chocolate while still hot, if desired.
