Ingredients

The cookie dough

  • ½ cup unsalted butter
  • 2 cups semi-sweet chocolate chips
  • cups all-purpose flour
  • ¼ cup hot cocoa mix
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract

Toppings

  • 48 mini marshmallows
  • 2-3 per cookie Mallow Bits

Instructions

  1. Melt butter and chocolate chips in a saucepan over low heat and let cool for about 10 minutes.
  2. Whisk together flour, hot cocoa mix, baking powder, and salt in a medium bowl.
  3. In a stand mixer, beat brown sugar and eggs together, then add vanilla extract.
  4. Slowly mix in the dry ingredients and melted chocolate, then refrigerate the dough for at least 1 hour or overnight.
  5. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  6. Form small balls of dough and place them on the baking sheet.
  7. Bake for 6 minutes, then add a mini marshmallow to each cookie and sprinkle with Mallow Bits.
  8. Bake for an additional 4 minutes until marshmallows are soft and cookies are set around the edges.
  9. Let cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
