Instructions
- Melt butter and chocolate chips in a saucepan over low heat and let cool for about 10 minutes.
- Whisk together flour, hot cocoa mix, baking powder, and salt in a medium bowl.
- In a stand mixer, beat brown sugar and eggs together, then add vanilla extract.
- Slowly mix in the dry ingredients and melted chocolate, then refrigerate the dough for at least 1 hour or overnight.
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Form small balls of dough and place them on the baking sheet.
- Bake for 6 minutes, then add a mini marshmallow to each cookie and sprinkle with Mallow Bits.
- Bake for an additional 4 minutes until marshmallows are soft and cookies are set around the edges.
- Let cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
