Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix together the egg, coconut sugar, almond butter, and vanilla.
- Stir in the cocoa powder and baking soda until thick.
- Add chocolate chips and mini marshmallows, ensuring some are on top of the cookies.
- If the almond butter was warm, chill the dough for 30 minutes.
- Roll the dough into balls and flatten slightly.
- Bake for 12-14 minutes and let cool completely before removing from the pan.
