Hot Cocoa Cookies

Ingredients

Cookie Dough

  • ½ cup butter
  • 12 oz chocolate chips
  • cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 18 large marshmallows, cut in half
  • to taste sprinkles

Icing

  • 1 cup powdered sugar
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 2 tbsp almond milk

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Lower heat and add chocolate chips, stirring until melted. Set aside to cool.
  3. Mix flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  4. In another bowl, beat eggs and sugars with a hand mixer, then add vanilla.
  5. Combine the cooled chocolate with the egg mixture.
  6. Gradually add the flour mixture to form the dough.
  7. Chill the dough in the fridge for 20 minutes.
  8. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  9. Roll dough into balls and bake for 10 minutes, then add half a marshmallow on top and bake for an additional 2-3 minutes.
  10. Let cookies cool on racks, then prepare icing by mixing all icing ingredients.
  11. Drizzle icing over cooled cookies and top with sprinkles.
