Dutch Oven Whole Chicken

The chicken and vegetables

carrots (cut into 2 inch pieces)

potatoes (cut into chunks)
The seasoning

paprika

garlic powder

Instructions
- Preheat the oven to 400°F.
- Combine the seasoning ingredients in a small bowl and mix well.
- Prepare the onion, carrots, and potatoes, and place them in the bottom of the dutch oven.
- Pat the chicken dry and truss the legs.
- Place the chicken on top of the vegetables in the dutch oven.
- Drizzle olive oil over the chicken and brush to coat.
- Sprinkle the seasoning mix over the chicken, ensuring it's breast side up.
- Cook uncovered in the oven for 60-90 minutes, until the internal temperature reaches 165°F.
- Remove the chicken from the oven and let it rest for at least 10 minutes before carving.
- Serve the chicken with the warm vegetables.
