Dutch Oven Whole Chicken

Ingredients

The chicken and vegetables

  • 1 whole chicken (4 to 5 pounds)
  • 2 tbsp olive oil
  • 1 medium onion (cut into thick slices)
  • 6 pieces carrots (cut into 2 inch pieces)
  • 1 lb potatoes (cut into chunks)

The seasoning

  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Combine the seasoning ingredients in a small bowl and mix well.
  3. Prepare the onion, carrots, and potatoes, and place them in the bottom of the dutch oven.
  4. Pat the chicken dry and truss the legs.
  5. Place the chicken on top of the vegetables in the dutch oven.
  6. Drizzle olive oil over the chicken and brush to coat.
  7. Sprinkle the seasoning mix over the chicken, ensuring it's breast side up.
  8. Cook uncovered in the oven for 60-90 minutes, until the internal temperature reaches 165°F.
  9. Remove the chicken from the oven and let it rest for at least 10 minutes before carving.
  10. Serve the chicken with the warm vegetables.
