Instructions
- Cook the red lentils in water with salt until tender.
- Drain the lentils and remove excess moisture.
- Sauté the diced bell pepper, carrots, and green onions until softened.
- Combine the cooked lentils, sautéed vegetables, rolled oats, cilantro, chili garlic sauce, cumin, red pepper flakes, and whisked egg in a bowl.
- Form the mixture into six patties using a measuring cup and flatten them.
- Cook the patties on a lightly oiled skillet over medium heat until golden, about 3-4 minutes per side.
- Serve the patties on burger buns with spinach and guacamole.
