Easy Lentil Patties

Ingredients

The patties

  • 1 cup dry red lentils
  • 2 cups water or vegetable broth
  • ½ teaspoon table salt
  • 1 tablespoon extra virgin olive oil
  • 1 medium green bell pepper
  • ½ cup matchstick carrots
  • ½ cup sliced green onions
  • ¾ cup rolled oats
  • ¼ cup fresh chopped cilantro
  • tablespoons chili garlic sauce
  • 1 teaspoon ground cumin
  • 1 pinch red pepper flakes
  • 1 large egg

For serving

  • as needed burger buns
  • as needed spinach
  • as needed guacamole

Instructions

  1. Cook the red lentils in water with salt until tender.
  2. Drain the lentils and remove excess moisture.
  3. Sauté the diced bell pepper, carrots, and green onions until softened.
  4. Combine the cooked lentils, sautéed vegetables, rolled oats, cilantro, chili garlic sauce, cumin, red pepper flakes, and whisked egg in a bowl.
  5. Form the mixture into six patties using a measuring cup and flatten them.
  6. Cook the patties on a lightly oiled skillet over medium heat until golden, about 3-4 minutes per side.
  7. Serve the patties on burger buns with spinach and guacamole.
