Vegetarian Lentil Burgers

extra-virgin olive oil (or clarified butter)
Instructions
- Combine lentils, eggs, and salt in a food processor and puree until textured.
- Transfer mixture to a bowl and stir in chopped onion and breadcrumbs.
- Let the mixture sit for a few minutes to absorb moisture.
- Form the mixture into twelve 1½-inch-thick patties.
- Heat oil in a skillet over medium-low heat and add four patties.
- Cover and cook for 7 to 10 minutes until browned on the bottom.
- Flip the patties and cook the other side for about 7 minutes until golden.
- Remove from skillet and cool on a wire rack.
- Carefully cut each patty in half and fill with desired toppings.
