Vegetarian Lentil Burgers

Ingredients

  • 3 cups cooked black lentils
  • 4 large eggs
  • ½ teaspoon fine-grain sea salt
  • 1 medium onion, finely chopped
  • 1 cup toasted fine (whole-grain) bread crumbs
  • 1 tablespoon extra-virgin olive oil (or clarified butter)

Instructions

  1. Combine lentils, eggs, and salt in a food processor and puree until textured.
  2. Transfer mixture to a bowl and stir in chopped onion and breadcrumbs.
  3. Let the mixture sit for a few minutes to absorb moisture.
  4. Form the mixture into twelve 1½-inch-thick patties.
  5. Heat oil in a skillet over medium-low heat and add four patties.
  6. Cover and cook for 7 to 10 minutes until browned on the bottom.
  7. Flip the patties and cook the other side for about 7 minutes until golden.
  8. Remove from skillet and cool on a wire rack.
  9. Carefully cut each patty in half and fill with desired toppings.
