Millet, Sweet Potato and Lentil Veggie Burgers

Ingredients

The burger mixture

  • ¾ cups dry millet
  • ½ cup dry brown lentils
  • 3 cups peeled and diced sweet potato
  • 2 teaspoons olive oil
  • 1 ¼ teaspoons salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 2 tablespoons bread crumbs
  • 1 teaspoon curry powder
  • ½ teaspoon garlic powder

For cooking

  • as needed spray cooking spray

Instructions

  1. Cook the lentils in a pot with water until tender, about 25 minutes.
  2. In another pot, cook the millet in water until all water is absorbed, about 25-30 minutes.
  3. Preheat the oven to 375°F and roast the diced sweet potatoes with olive oil, salt, and pepper until tender, about 25-30 minutes.
  4. Blend the millet, lentils, and sweet potatoes separately in a food processor until mostly broken down but still textured.
  5. Combine all ingredients in a bowl and mix until combined, then form into 8 patties.
  6. Cook the patties in a skillet over medium heat until browned and warmed through, about 3-5 minutes per side.
