Instructions
- Cook the lentils in a pot with water until tender, about 25 minutes.
- In another pot, cook the millet in water until all water is absorbed, about 25-30 minutes.
- Preheat the oven to 375°F and roast the diced sweet potatoes with olive oil, salt, and pepper until tender, about 25-30 minutes.
- Blend the millet, lentils, and sweet potatoes separately in a food processor until mostly broken down but still textured.
- Combine all ingredients in a bowl and mix until combined, then form into 8 patties.
- Cook the patties in a skillet over medium heat until browned and warmed through, about 3-5 minutes per side.
