Ingredients

The burger mixture

  • ½ cup dry millet
  • cups water
  • 1 large onion
  • 3 cups arugula
  • 2 stalks celery
  • 2 carrots carrots

The seasonings and flour

  • 2 tsp sea salt
  • 1 T cumin
  • ½ tsp chili powder
  • pinch cayenne pepper
  • cups millet flour

Instructions

  1. Boil 1½ cups of water in a saucepan, then add the soaked millet and simmer for 15-20 minutes until tender.
  2. Preheat the oven to 400°F and chop the vegetables, using a food processor for uniformity if desired.
  3. Sauté the chopped onion in coconut oil until translucent, then add the remaining vegetables and cook until tender.
  4. Combine the cooked millet with the vegetable mixture in a large bowl, then add the seasonings and millet flour.
  5. Scoop the mixture onto a parchment-lined baking sheet, shaping them into patties.
  6. Bake at 400°F for 10 minutes, flip the patties, and bake for another 10 minutes until firm and crispy.
  7. Serve the burgers hot.
