Instructions
- Boil 1½ cups of water in a saucepan, then add the soaked millet and simmer for 15-20 minutes until tender.
- Preheat the oven to 400°F and chop the vegetables, using a food processor for uniformity if desired.
- Sauté the chopped onion in coconut oil until translucent, then add the remaining vegetables and cook until tender.
- Combine the cooked millet with the vegetable mixture in a large bowl, then add the seasonings and millet flour.
- Scoop the mixture onto a parchment-lined baking sheet, shaping them into patties.
- Bake at 400°F for 10 minutes, flip the patties, and bake for another 10 minutes until firm and crispy.
- Serve the burgers hot.
