Gluten-Free Baked Lentil Burgers

Ingredients

  • 1 cup cooked brown lentils
  • 1 regular egg or 1 vegan egg egg
  • ¼ cup roasted sunflower seeds
  • 1 cup chopped mushrooms
  • ¼ cup almond flour
  • 2 cloves minced or crushed garlic
  • 2 tablespoons chopped onion
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Combine all the ingredients in a food processor.
  3. Process on high for about 45 seconds until the lentils are mostly broken down.
  4. Transfer the mixture to a mixing bowl and form six patties with your hands.
  5. Place the patties on the baking sheet and bake for 35 minutes, flipping them once halfway through.
  6. Let the patties cool for a few minutes before serving.
