  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon avocado oil
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped

Mexican Street Corn

  • 2 cups cooked corn
  • 2 tablespoons mayonnaise
  • 2 tablespoons green onion, chopped
  • 2 tablespoons cilantro, chopped
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ½ to 1 teaspoon finely diced jalapeno
  • ¼ cup cotija cheese, crumbled
  • 1 tablespoon fresh lime juice

Street Tacos

  • 8–10 pieces white corn tortillas
  • 1 spray cooking spray
  • 1 piece avocado, sliced
  • to taste none Pickled Onions

Instructions

  1. Make the Mexican Street Corn Salad by mixing corn, mayo, green onion, cilantro, chili powder, garlic powder, jalapeno, cotija cheese, and lime juice in a bowl.
  2. Season the chicken by combining it with the chipotle spice blend, salt, and olive oil in a large bowl.
  3. Cook the chicken in a skillet with avocado oil, stirring until cooked through and nicely seared, then finish with lime juice and cilantro.
  4. Heat the corn tortillas in a skillet for about 1 minute on each side until warm.
  5. Assemble the tacos by adding chicken, Mexican street corn, avocado, and pickled onions to the warm tortillas, garnishing with cilantro and cotija cheese.
