Instructions
- Make the Mexican Street Corn Salad by mixing corn, mayo, green onion, cilantro, chili powder, garlic powder, jalapeno, cotija cheese, and lime juice in a bowl.
- Season the chicken by combining it with the chipotle spice blend, salt, and olive oil in a large bowl.
- Cook the chicken in a skillet with avocado oil, stirring until cooked through and nicely seared, then finish with lime juice and cilantro.
- Heat the corn tortillas in a skillet for about 1 minute on each side until warm.
