Ingredients

The chicken

  • 1 lb boneless skinless chicken breast
  • 1 tablespoon Smoky Chipotle Seasoning
  • 1 tablespoon avocado oil

The pineapple salsa

  • 1 cup diced fresh pineapple
  • cup finely diced red pepper
  • ¼ cup finely diced red onion
  • ¼ cup chopped cilantro
  • 1 ½ tablespoons finely diced jalapeno
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • to taste salt

The tacos

  • ¼ cup crumbled queso fresco
  • 1 avocado, sliced
  • 10 tortilla or lettuce wraps

Instructions

  1. Prepare the pineapple salsa by mixing diced pineapple, red pepper, red onion, cilantro, jalapeno, garlic, lime juice, and salt in a bowl.
  2. Preheat the grill to medium-high heat.
  3. Mix the Smoky Chipotle Seasoning with avocado oil and rub it onto the chicken breast.
  4. Oil the grill grates and place the seasoned chicken on the grill, cooking for 4-6 minutes on each side.
  5. Remove the chicken from the grill and let it rest for 5 minutes before chopping.
  6. Assemble the tacos by adding chopped chicken, pineapple salsa, queso fresco, and avocado slices to each tortilla or lettuce wrap.
  7. Serve the tacos immediately.
