Instructions
- Prepare the pineapple salsa by mixing diced pineapple, red pepper, red onion, cilantro, jalapeno, garlic, lime juice, and salt in a bowl.
- Preheat the grill to medium-high heat.
- Mix the Smoky Chipotle Seasoning with avocado oil and rub it onto the chicken breast.
- Oil the grill grates and place the seasoned chicken on the grill, cooking for 4-6 minutes on each side.
- Remove the chicken from the grill and let it rest for 5 minutes before chopping.
- Assemble the tacos by adding chopped chicken, pineapple salsa, queso fresco, and avocado slices to each tortilla or lettuce wrap.
- Serve the tacos immediately.
