Ingredients

The chicken

  • ½ lb. boneless, skinless Chicken Breast or Chicken Thighs
  • 1 tbsp Avocado Oil
  • 2 Chipotles from a can of Chipotles in Adobo, finely chopped
  • 1 tbsp Adobo Sauce
  • 1 tbsp Honey
  • ¼ cup finely chopped Red Onion
  • 2 cloves Garlic, minced
  • ¼ cup Water or Low-Sodium Chicken Broth
  • 1 tbsp Unsalted Butter
  • Juice of ¼ Lime

The tortillas

  • 4 pieces warmed Tortillas

The seasoning

  • ¼ tsp Kosher Salt
  • ¼ tsp Cumin
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Chipotle Powder
  • ¼ tsp Mexican Oregano
  • ¼ tsp Smoked Paprika
  • tsp Cayenne

Instructions

  1. Mix all taco seasoning ingredients and set aside.
  2. Cut chicken into bite-sized cubes and toss in the seasoning. Let sit for 10 minutes.
  3. Heat avocado oil in a pan over medium heat and cook chicken for about 5 minutes.
  4. In a bowl, mix chipotles, adobo sauce, honey, red onion, and garlic.
  5. Add the mixture to the pan with chicken and cook for another 3-4 minutes until browned.
  6. Lower heat, stir in butter and water until melted and a sauce forms.
  7. Add lime juice, turn off heat, and let chicken rest.
  8. Serve chicken in warmed tortillas with desired toppings.
