Instructions
- Combine chicken thighs, olive oil, and spices in a bowl and toss to coat.
- Heat a frying pan and grease it, then add the chicken thighs.
- Cook the chicken until browned, about 2 to 5 minutes per side, until the internal temperature reaches 160°F.
- Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
- Mix the ingredients for the chipotle yogurt sauce in a bowl.
- Assemble the tacos by placing the chicken on tortillas, topping with pico de gallo and yogurt sauce.
