Ingredients

The Chicken

  • 2 large or 4 small boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • teaspoon pepper

The Tacos

  • 4 pieces corn tortillas
  • 1 cup Pico de gallo
  • 2 cups thinly sliced cabbage

Chipotle Yogurt Sauce

  • 1 5-ounce container plain Greek yogurt
  • 1 teaspoon sauce from a can of chipotle peppers
  • teaspoons juice from lime
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • ⅛ to ¼ teaspoon salt
  • to taste pepper

Instructions

  1. Combine chicken thighs, olive oil, and spices in a bowl and toss to coat.
  2. Heat a frying pan and grease it, then add the chicken thighs.
  3. Cook the chicken until browned, about 2 to 5 minutes per side, until the internal temperature reaches 160°F.
  4. Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
  5. Mix the ingredients for the chipotle yogurt sauce in a bowl.
  6. Assemble the tacos by placing the chicken on tortillas, topping with pico de gallo and yogurt sauce.
