Spicy Black Bean Meatballs

Instructions
- Preheat the oven to 350ºF.
- Process the oats in a food processor until coarsely ground.
- In a medium bowl, partially mash the black beans with a fork.
- Fold in the processed oats, corn, green onions, garlic, and salsa.
- Add the spices (cumin, chili powder, oregano, paprika, cayenne) and mix well.
- Season with salt and pepper, then mix in the beaten egg.
- Spray a mini-muffin tin with oil and form the mixture into 12 balls, placing each in a muffin cup.
- Bake for 20-30 minutes until the tops are dry and beginning to brown.
- Let cool for 5 minutes, then loosen and remove from the tin.
- Serve with salsa or in wraps, burritos, or sliders.
