Spicy Black Bean Meatballs

Ingredients

  • ½ cup old-fashioned oats
  • 1 15-ounce can black beans, rinsed and drained
  • cup frozen corn kernels
  • ¼ cup thinly sliced green onions
  • 3 cloves garlic, minced
  • 3 tablespoons salsa
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • to taste salt and pepper
  • 1 egg beaten
  • for serving salsa

Instructions

  1. Preheat the oven to 350ºF.
  2. Process the oats in a food processor until coarsely ground.
  3. In a medium bowl, partially mash the black beans with a fork.
  4. Fold in the processed oats, corn, green onions, garlic, and salsa.
  5. Add the spices (cumin, chili powder, oregano, paprika, cayenne) and mix well.
  6. Season with salt and pepper, then mix in the beaten egg.
  7. Spray a mini-muffin tin with oil and form the mixture into 12 balls, placing each in a muffin cup.
  8. Bake for 20-30 minutes until the tops are dry and beginning to brown.
  9. Let cool for 5 minutes, then loosen and remove from the tin.
  10. Serve with salsa or in wraps, burritos, or sliders.
