Ingredients

The chicken

  • 2 large boneless, skinless chicken breasts

  • to taste freshly ground black pepper
  • 1 cup Diamond of California pecans
  • ½ cup panko breadcrumbs
  • 1 ½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 large egg

The sauce

  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey

Instructions

  1. Preheat the air fryer to 360°F.
  2. Pat the chicken cutlets dry and season with salt and pepper.
  3. Chop the pecans in a food processor and combine with breadcrumbs, paprika, and garlic powder in a bowl.
  4. Whisk the egg in a separate bowl.
  5. Dip each chicken cutlet in the egg, then coat with the pecan mixture.
  6. Spray the air fryer basket with cooking spray and place the chicken in a single layer.
  7. Cook for 6 minutes, flip the chicken, and cook for another 6 minutes.
  8. While the chicken cooks, mix the ingredients for the honey mustard sauce in a small bowl.
  9. Serve the chicken with the honey mustard sauce.
