Instructions
- Toast the rinsed quinoa in a saucepan for 3-4 minutes.
- Add water, bring to a boil, then reduce to a simmer and cover for 18-20 minutes until liquid is absorbed.
- Steam the green beans until just tender, then shock them in ice water.
- Mix the peanut sauce ingredients in a bowl, adjusting flavors to taste.
- Divide quinoa into bowls and top with green beans, bell pepper, mung bean sprouts, and carrots.
- Drizzle with peanut sauce and add optional toppings before serving.
