Ingredients

The Gado-Gado

  • ½ cup white or red quinoa
  • 1 cup water
  • 1 cup green beans
  • ½ medium red bell pepper
  • ¾ cup mung bean sprouts
  • cup red cabbage
  • 2 whole carrots

The Spicy Peanut Sauce

  • cup salted creamy peanut butter
  • 1 Tbsp gluten-free tamari
  • 2-3 Tbsp maple syrup
  • 3 Tbsp lime juice
  • 1 tsp chili garlic sauce
  • 3-4 Tbsp water

For Serving (optional)

  • to taste cilantro
  • to taste lime wedges
  • to taste red pepper flake

Instructions

  1. Toast the rinsed quinoa in a saucepan for 3-4 minutes.
  2. Add water, bring to a boil, then reduce to a simmer and cover for 18-20 minutes until liquid is absorbed.
  3. Steam the green beans until just tender, then shock them in ice water.
  4. Mix the peanut sauce ingredients in a bowl, adjusting flavors to taste.
  5. Divide quinoa into bowls and top with green beans, bell pepper, mung bean sprouts, and carrots.
  6. Drizzle with peanut sauce and add optional toppings before serving.
