Instructions
- Cook the brown rice in a saucepan with water and a pinch of salt until tender.
- Preheat the oven and bake the sweet potato slices until tender and golden.
- Steam the green beans until tender, then cool them in ice water.
- Prepare the peanut sauce by whisking together the peanut butter, tamari, lime juice, maple syrup, and chili garlic sauce, adding water to achieve the desired consistency.
- Assemble the bowls with rice, roasted sweet potato, steamed green beans, red pepper, bean sprouts, cilantro, and egg if using.
- Drizzle with the spicy peanut sauce and top with peanuts if desired.
