Ingredients

The rice

  • 1 cup short grain brown rice
  • 1 ¾ cups water
  • 1 pinch sea salt (optional)

The vegetables

  • 1 large (~200 g) sweet potato
  • 1 Tbsp avocado oil
  • 8 ounces green beans
  • ½ medium red bell pepper
  • ¾ cup bean sprouts

The peanut sauce

  • ¼ cup natural salted peanut butter
  • 1 Tbsp tamari (or soy sauce if not gluten free)
  • 1-2 Tbsp fresh lime juice
  • 1-2 Tbsp maple syrup
  • 2-3 tsp chili garlic sauce
  • 1-4 Tbsp hot water

For serving

  • to taste fresh chopped cilantro
  • 2-3 Tbsp roasted salted peanuts (optional)
  • 1 hard-boiled egg (optional)

Instructions

  1. Cook the brown rice in a saucepan with water and a pinch of salt until tender.
  2. Preheat the oven and bake the sweet potato slices until tender and golden.
  3. Steam the green beans until tender, then cool them in ice water.
  4. Prepare the peanut sauce by whisking together the peanut butter, tamari, lime juice, maple syrup, and chili garlic sauce, adding water to achieve the desired consistency.
  5. Assemble the bowls with rice, roasted sweet potato, steamed green beans, red pepper, bean sprouts, cilantro, and egg if using.
  6. Drizzle with the spicy peanut sauce and top with peanuts if desired.
