Ingredients

The fish and vegetables

  • 16 ounces Alaskan Halibut fillets
  • 8 ounces asparagus
  • 12 pieces grape tomatoes

The topping

  • 4 ounces crabmeat
  • 1 teaspoon chopped garlic
  • 1 teaspoon fresh parsley

The seasoning and oil

  • 1 tablespoon olive oil
  • to taste sea salt
  • to taste black pepper
  • to taste Old Bay seasoning

Instructions

  1. Season the asparagus with salt, pepper, and olive oil, then roast in the oven at 350°F for 15-20 minutes.
  2. Rinse the halibut, pat dry, and season with salt, pepper, and Old Bay seasoning.
  3. Heat olive oil in a skillet over medium-high heat and sear the halibut for 3-4 minutes on one side until golden brown.
  4. Flip the halibut and sear the other side briefly.
  5. Transfer the halibut to a baking dish with a little water and cook in the oven for an additional 5 minutes.
  6. In a small frying pan, heat olive oil, add garlic and grape tomatoes, and sauté for 1-2 minutes.
  7. Add the crabmeat to the pan and cook until heated through, then stir in parsley and remove from heat.
  8. Plate the asparagus, top with halibut, and finish with the crabmeat mixture.
