Instructions
- Preheat the oven to 425°F and prepare a baking dish with cooking spray.
- Pat the halibut dry and season with salt, pepper, and lemon juice.
- Prepare the tomatoes and vegetables similarly, then place them in a baking tray.
- Bake the halibut for about 6-7 minutes, checking for thickness.
- While the fish bakes, mix butter, mayonnaise, Parmesan, creole seasoning, garlic, lemon zest, and basil in a bowl.
- Spread the mixture over the halibut and vegetables, if using.
- Return to the oven and broil for 2-3 minutes until lightly browned.
- Serve immediately, garnished with lemon slices.
