Baked Halibut

Ingredients

The fish and vegetables

  • 2-4 fillets Halibut
  • ½ pound fresh thin asparagus
  • ½ pint cherry tomatoes
  • to taste salt
  • to taste pepper
  • ½ lemon

The sauce

  • 2 tablespoons butter
  • 2 tablespoons mayonnaise
  • ½ cup freshly grated Parmesan cheese
  • ½-1 teaspoon creole seasoning
  • 1 ½ tablespoons garlic
  • 1 teaspoon lemon zest
  • 2 tablespoons finely chopped basil
  • lemon slices (optional)

Instructions

  1. Preheat the oven to 425°F and prepare a baking dish with cooking spray.
  2. Pat the halibut dry and season with salt, pepper, and lemon juice.
  3. Prepare the tomatoes and vegetables similarly, then place them in a baking tray.
  4. Bake the halibut for about 6-7 minutes, checking for thickness.
  5. While the fish bakes, mix butter, mayonnaise, Parmesan, creole seasoning, garlic, lemon zest, and basil in a bowl.
  6. Spread the mixture over the halibut and vegetables, if using.
  7. Return to the oven and broil for 2-3 minutes until lightly browned.
  8. Serve immediately, garnished with lemon slices.
