Instructions
- Preheat the oven to 400 degrees.
- Rinse the halibut fillets and pat dry with paper towels.
- In a bowl, combine the breadcrumbs, Romano cheese, parsley, lemon zest, black pepper, and melted butter, mixing well.
- Divide the breadcrumb mixture evenly among the fillets, spreading it out in an even layer.
- Place the fillets on a non-stick baking dish and add a little water to the bottom to keep the fish moist.
- Bake for 15 minutes.
- For the lemon beurre blanc sauce, heat a small skillet over medium heat.
- Combine the white wine, brown sugar, salt, and pepper, and simmer until reduced by three-quarters.
- Stir in the lemon juice and zest, then reduce the heat.
- Roll the butter in flour and whisk it into the pan to thicken the sauce.
- Stir in the half and half (or heavy cream) and heat without boiling.
- Serve the halibut topped with the lemon beurre blanc sauce and your favorite sides.
