Ingredients

The fish

  • 8–10 ounces halibut
  • 1 clove garlic
  • 1–2 tablespoons olive oil
  • to taste salt and pepper

The noodles

  • 1 tablespoon olive oil
  • 1 fat shallot shallot
  • 3 cloves garlic
  • 12–16 ounces zucchini noodles
  • to taste salt and pepper
  • 2 teaspoons lemon zest
  • ½ cup chopped Italian parsley
  • 1 tablespoon lemon juice

Garnish

  • to taste sweet cherry tomatoes
  • to taste chili flakes
  • to taste shaved pecorino cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a skillet and infuse with smashed garlic.
  3. Pat the fish dry, season with salt and pepper, and sear until golden on both sides.
  4. Transfer the fish to the oven to finish cooking for about 3 to 6 minutes.
  5. In another skillet, heat more oil and sauté shallots and garlic until fragrant.
  6. Add zucchini noodles and season with salt and pepper, cooking until softened.
  7. Stir in lemon zest, parsley, and lemon juice, adjusting seasoning as needed.
  8. Divide the zucchini noodles into bowls and top with the halibut.
  9. Garnish with cherry tomatoes, chili flakes, and pecorino cheese if desired.
