Instructions
- Preheat the oven to 375°F.
- Heat olive oil in a skillet and infuse with smashed garlic.
- Pat the fish dry, season with salt and pepper, and sear until golden on both sides.
- Transfer the fish to the oven to finish cooking for about 3 to 6 minutes.
- In another skillet, heat more oil and sauté shallots and garlic until fragrant.
- Add zucchini noodles and season with salt and pepper, cooking until softened.
- Stir in lemon zest, parsley, and lemon juice, adjusting seasoning as needed.
- Divide the zucchini noodles into bowls and top with the halibut.
- Garnish with cherry tomatoes, chili flakes, and pecorino cheese if desired.
