Ingredients

  • 1 and 1/4 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ cup granulated sugar
  • ¼ cup packed light brown sugar
  • cup unsweetened applesauce
  • 1 large egg white
  • cup diced fresh strawberries
  • cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a muffin pan.
  2. In a large bowl, whisk together the flour, baking soda, and cinnamon.
  3. In another bowl, combine the brown sugar, granulated sugar, and applesauce until smooth, then mix in the egg white.
  4. Combine the wet and dry ingredients, stirring until just mixed, then fold in the strawberries and chocolate chips.
  5. Divide the batter evenly among the muffin cups and bake for 17-20 minutes until golden and a toothpick comes out clean.
  6. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
