Instructions
- Preheat the oven and prepare a baking sheet.
- Pierce holes in the sweet potatoes and drizzle with olive oil, salt, and pepper.
- Bake the sweet potatoes until fork tender.
- Prepare the filling of your choice while the potatoes bake.
- Cut a slit in each potato and lightly mash the inside.
- Stuff each potato with the filling and top with cheese if desired.
- Bake again until the cheese is melted.
