Ingredients

Sweet Potatoes + BBQ Chicken

  • 4-6 pieces sweet potatoes
  • 3 cups cooked shredded chicken
  • 1-2 cups BBQ sauce

Corn and Black Bean Salad

  • 1 can (15-ounce) black beans
  • 1 cup corn kernels
  • ½ cup chopped cilantro
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon salt
  • pinch black pepper

Toppings

  • to taste chopped tomatoes
  • to taste shredded cheese
  • to taste tortilla chips
  • to taste cilantro lime dressing

Instructions

  1. Cook the sweet potatoes by either baking them in the oven at 425°F for 45-60 minutes or using an Instant Pot with 1 cup of water for 12-14 minutes on high pressure.
  2. Mix the cooked shredded chicken with BBQ sauce until well combined and warm.
  3. Prepare the corn and black bean salad by combining all the salad ingredients in a bowl and tossing them together.
  4. Slice the cooked sweet potatoes open and stuff them with BBQ chicken, corn and black bean salad, and your choice of toppings.
