Instructions
- Cook the sweet potatoes by either baking them in the oven at 425°F for 45-60 minutes or using an Instant Pot with 1 cup of water for 12-14 minutes on high pressure.
- Mix the cooked shredded chicken with BBQ sauce until well combined and warm.
- Prepare the corn and black bean salad by combining all the salad ingredients in a bowl and tossing them together.
- Slice the cooked sweet potatoes open and stuff them with BBQ chicken, corn and black bean salad, and your choice of toppings.
