BBQ Chicken Stuffed Sweet Potatoes

Instructions
- Wash and poke the sweet potatoes, then wrap each in a paper towel.
- Microwave the sweet potatoes on HIGH for 5-8 minutes until tender.
- Mix the shredded chicken with the BBQ sauce in a bowl until coated.
- In another bowl, whisk together mustard, honey, garlic powder, smoked paprika, apple cider vinegar, olive oil, salt, and pepper until emulsified.
- Toss the broccoli slaw with the dressing until well coated.
- Slice the sweet potatoes open and fill them with BBQ chicken, top with broccoli slaw and sliced avocado.
