BBQ Chicken Stuffed Sweet Potatoes

Ingredients

The filling

  • 2 cups shredded rotisserie chicken
  • ½ cup bbq sauce

The sweet potatoes

  • 4 medium fat sweet potatoes

The broccoli slaw

  • 12 oz package of broccoli slaw
  • 1 teaspoon mustard
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • to taste salt & pepper
  • 1 avocado, sliced

Instructions

  1. Wash and poke the sweet potatoes, then wrap each in a paper towel.
  2. Microwave the sweet potatoes on HIGH for 5-8 minutes until tender.
  3. Mix the shredded chicken with the BBQ sauce in a bowl until coated.
  4. In another bowl, whisk together mustard, honey, garlic powder, smoked paprika, apple cider vinegar, olive oil, salt, and pepper until emulsified.
  5. Toss the broccoli slaw with the dressing until well coated.
  6. Slice the sweet potatoes open and fill them with BBQ chicken, top with broccoli slaw and sliced avocado.
