BBQ Stuffed Sweet Potatoes

Ingredients

The sweet potatoes

  • 2 extra-large yams
  • 4 small yams

The protein

  • 1 8-ounce chicken breast
  • 14 ounce can black beans

The toppings

  • ½ cup BBQ Sauce
  • ¼–½ cup shredded cheese
  • 1 avocado
  • ¼ cup chopped cilantro
  • cup chopped scallions or red onion

Seasoning

  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Cut large yams in half lengthwise or poke holes in small ones, and place on a parchment-lined sheet pan, cut side down.
  3. If using chicken, coat it in oil, season with salt and pepper, and place it on the sheet pan with the yams. Bake for 30 minutes.
  4. Check if the yams are tender and the chicken is cooked through. If not, continue baking until done.
  5. Turn the yams over, shred the chicken, and mix a few tablespoons of BBQ sauce into the yams.
  6. Stuff the yams with black beans and chicken, adding more BBQ sauce on top.
  7. Add cheese if desired, and return to the oven for another 10-15 minutes until heated through and cheese is melted.
  8. Garnish with avocado, scallions, and cilantro before serving.
