Instructions
- Preheat the oven to 425°F.
- Cut large yams in half lengthwise or poke holes in small ones, and place on a parchment-lined sheet pan, cut side down.
- If using chicken, coat it in oil, season with salt and pepper, and place it on the sheet pan with the yams. Bake for 30 minutes.
- Check if the yams are tender and the chicken is cooked through. If not, continue baking until done.
- Turn the yams over, shred the chicken, and mix a few tablespoons of BBQ sauce into the yams.
- Stuff the yams with black beans and chicken, adding more BBQ sauce on top.
- Add cheese if desired, and return to the oven for another 10-15 minutes until heated through and cheese is melted.
- Garnish with avocado, scallions, and cilantro before serving.
