Instructions
- Crush the garlic with salt using a mortar and pestle, then mix in the oregano.
- In a bowl or resealable bag, combine the crushed garlic, olive oil, lime juice, and orange juice.
- Season the chicken with salt and pepper, then marinate it in the mojo mixture for at least 3 hours or overnight.
- Preheat the oven to 400°F (200°C).
- On a baking sheet, arrange the onion, citrus slices, green olives, and marinated chicken with the marinade.
- Bake until the chicken is cooked through and the skin is crispy, about 40 to 45 minutes.
- Serve with rice, tostones, and/or black beans.
