Mojo Chicken

Ingredients

Mojo Marinade

  • 6 cloves garlic
  • 1 medium shallot
  • 2 teaspoons Diamond Crystal kosher salt
  • 2 teaspoons grated orange zest
  • 2 teaspoons grated lime zest
  • teaspoons ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon freshly ground black pepper
  • ½ cup freshly squeezed orange juice
  • cup freshly squeezed lime juice
  • cup extra virgin olive oil

Chicken

  • 3 pounds chicken thighs
  • 2 teaspoons Diamond Crystal kosher salt

Instructions

  1. Blend the marinade ingredients in a high-speed blender until smooth.
  2. Reserve ⅓ cup of the marinade for serving.
  3. Toss the chicken with kosher salt and the remaining marinade, then marinate in the fridge for at least an hour.
  4. Preheat the oven to 400°F (convection) or 425°F (regular).
  5. Place the chicken skin-side down on a wire rack in a baking sheet and roast for 20 minutes.
  6. Flip the chicken skin-side up and roast for an additional 15 to 25 minutes until cooked through.
  7. For air fryer, cook at 400°F for 20 to 25 minutes, flipping halfway.
  8. For grilling, cook on high heat for about 25 minutes, turning every 5-7 minutes.
  9. Serve the chicken with the reserved sauce.
