Ingredients

The marinade

  • ¼ cup fresh orange juice
  • ¼ cup fresh lime juice
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)

The protein

  • 2 pounds boneless, skinless chicken thighs

Instructions

  1. Combine all marinade ingredients in a blender until well mixed.
  2. Place chicken thighs in a resealable bag or dish and pour the marinade over them, ensuring they are well coated.
  3. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  4. Preheat the grill to medium-high heat (about 400°F).
  5. Grill the chicken thighs for 6-8 minutes per side or until they reach an internal temperature of 165°F.
  6. Remove from the grill and let rest for a few minutes before serving.
