Coconut Pancakes

Instructions
- Mix the dry ingredients in a bowl.
- Whisk the wet ingredients in another bowl.
- Combine the wet and dry ingredients, stirring until just mixed.
- Heat a skillet or griddle to medium-low heat.
- Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
- Repeat with remaining batter and serve warm.
