Ingredients

  • 1 cup whole wheat pastry flour or whole wheat flour
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup light coconut milk or fresh coconut water
  • 1 large egg
  • 1 ½ tablespoons melted coconut oil or butter

Instructions

  1. Mix the dry ingredients in a bowl.
  2. Whisk the wet ingredients in another bowl.
  3. Combine the wet and dry ingredients, stirring until just mixed.
  4. Heat a skillet or griddle to medium-low heat.
  5. Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
  6. Repeat with remaining batter and serve warm.
